We spent a few weeks exploring New Mexico.

It is a landscape we have never experienced before, and it is out-of-this-world (our limited world at least). We enjoyed Roswell (Bottomless State Park is INCREDIBLE), Albuquerque, Santa Fe and explored some of the most incredible natural wonders the state has to offer. A state rich in history, tradition and mouth-watering food. The food is insane. (The constant food theme in our adventures is likely the reason my two-a-day workouts are resulting in much.) At least I discovered that Sopapillas are my spirit animal.
